There’s something incredibly satisfying about biting into a perfectly crafted shrimp taco. The combination of fresh ingredients and bold flavors takes you straight to the vibrant streets of Mexico. Today, I’m excited to share my favorite shrimp taco recipe with you. It’s a hit at family gatherings and perfect for a quick weeknight dinner!

Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 1 avocado (sliced)
  • 1/2 cup cotija cheese (crumbled)
  • 1/4 cup chipotle sauce
  • 1/2 red onion (thinly sliced)
  • 1/4 cup cilantro (chopped)
  • 2 limes (cut into wedges)
  • 8 small corn tortillas
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the Shrimp: In a bowl, toss the shrimp with olive oil, salt, and pepper. Let it marinate for about 15 minutes.
  2. Cook the Shrimp: Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they are pink and opaque. Remove from heat.
  3. Prepare the Toppings: While the shrimp are cooking, slice the avocado, crumble the cotija cheese, and thinly slice the red onion. Chop the cilantro and cut the limes into wedges.
  4. Warm the Tortillas: In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable.
  5. Assemble the Tacos: Place a few shrimp on each tortilla. Top with avocado slices, red onion, cotija cheese, and cilantro. Drizzle with chipotle sauce and squeeze a lime wedge over the top.
  6. Serve and Enjoy: Serve the tacos immediately with extra lime wedges and chipotle sauce on the side.
