Ingredients

For the Soy-Ginger Dressing:
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp ginger, grated
- 1 tsp honey
- 1 tbsp sesame oil
For Serving:
- 1 head butter lettuce, leaves separated
- 1/2 cup green onions, thinly sliced
- 1/4 cup roasted peanuts, roughly chopped
- 1 cup carrot strips
- 1/4 cup fresh cilantro leaves
Instructions
- Prepare the sauces: In two separate bowls, whisk together the ingredients for the peanut sauce and soy-ginger dressing. Set aside.
- Cook the turkey filling:
- Heat oil in a large skillet over medium-high heat.
- Add garlic, ginger, and onion. Sauté until fragrant, about 2 minutes.
- Add ground turkey, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes.
- Stir in bell pepper, soy sauce, rice vinegar, and sriracha. Cook for another 3-4 minutes.
- Season with salt and pepper to taste. Remove from heat and let cool slightly.
- Assemble the wraps:
- Lay out butter lettuce leaves on a serving platter.
- Spoon the turkey mixture into each leaf.
- Drizzle with peanut sauce and soy-ginger dressing.
