Homemade Cajun Red Beans and Rice with Peppers: A Vegetarian Delight

Homemade Cajun Read Beans and Rice with Peppers | Brent Hofacker

Today, I’m excited to share my vegetarian twist on a classic: Cajun Red Beans and Rice with Peppers. This recipe packs all the flavor of the traditional dish, with a medium spice level that’ll warm your soul without setting your tongue on fire!

Ingredients (Serves 4-6):

  • 1 lb dried red kidney beans, soaked overnight
  • 1 large onion, diced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 4 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper (adjust for desired heat)
  • 2 bay leaves
  • 4 cups vegetable broth
  • Salt and black pepper to taste
  • 3 cups cooked long-grain rice
  • 1/4 cup fresh parsley, chopped
  • Hot sauce (optional, for serving)

Instructions:

  1. Prep the beans: Drain and rinse the soaked kidney beans.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add onion, bell peppers, and celery. Cook until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.
  3. Spice it up: Stir in the smoked paprika, thyme, oregano, and cayenne pepper. Let the spices toast for a minute, releasing their aromatic oils.
  4. Add beans and liquid: Add the drained beans, bay leaves, and vegetable broth. Bring to a boil, then reduce heat and simmer, covered, for about 1.5 to 2 hours, or until beans are tender.
  5. Mash and season: Remove bay leaves. Use a wooden spoon to mash some of the beans against the side of the pot to create a creamy texture. Season with salt and black pepper to taste.
  6. Serve: Spoon the beans over hot cooked rice, garnish with fresh parsley, and serve with hot sauce on the side for those who like an extra kick!

Tips and Variations:

  • For a smoky flavor without meat, try adding a teaspoon of liquid smoke to the pot.
  • Don’t have time to soak beans overnight? Use the quick-soak method: Bring beans to a boil, remove from heat, and let sit for an hour before cooking.
  • Experiment with different bell pepper colors for a vibrant dish!

Serving Suggestions:

Pair this hearty dish with a crisp green salad and a slice of warm cornbread for a complete meal. The combination of creamy beans, fluffy rice, and crunchy peppers creates a texture party in your mouth!

Remember, the key to great Cajun cooking is patience. Let those flavors meld and develop as the beans simmer. Your taste buds will thank you!
