Ingredients:

- 1 tablespoon all-purpose flour
- 1 cup milk
- 8 ounces cheddar cheese, grated
- 4 ounces Monterey Jack cheese, grated
- 1/2 cup diced tomatoes with green chilies (like Rotel)
- 1/4 teaspoon salt
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
Instructions:
- Melt the Butter: In a medium saucepan, melt the butter over medium heat.
- Add Flour: Sprinkle the flour over the melted butter, whisking to combine into a smooth paste. Continue to cook for about 1 minute, whisking constantly.
