Homemade English Muffins Recipe
Ingredients:
- 1 cup of milk
- 2 tablespoons of white sugar
- 1 packet (0.25 oz) of active dry yeast
- 1 cup warm water (110 degrees F/45 degrees C)
- 1/4 cup melted butter
- 6 cups all-purpose flour
- 1 teaspoon salt
Tools:

- Skillet or griddle

- Round cutter
Directions:
- Activate the Yeast:
In a small bowl, dissolve the sugar in warm water, then sprinkle the yeast over the top. Let it sit for about 10 minutes, or until it becomes frothy. - Mix Ingredients:
In a large bowl, mix the milk, melted butter, salt, and one cup of flour. Add the yeast mixture and continue mixing. Gradually add the remaining flour to form a soft dough. - Knead the Dough:
Turn the dough out onto a floured surface and knead until smooth and elastic, about 8-10 minutes. - First Rise:
Place the dough in a lightly greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 hour. - Shape the Muffins:
Punch down the dough and turn it out onto a floured surface. Roll out to about 1/2 inch thick. Cut rounds with a biscuit cutter, drinking glass, or empty tuna can. Sprinkle waxed paper with cornmeal and set the rounds on this to rise. Dust tops with cornmeal as well. - Second Rise:
Cover and let rise until doubled, about 30 minutes. - Cook the Muffins:
Heat a greased skillet or griddle over medium heat. Cook the muffins on the griddle for about 10 minutes on each side. They should be golden brown. - Cool & Serve:
Allow muffins to cool and split with a fork. Toast and serve with your favorite jams, butters, or as a base for eggs Benedict.
Tips:
- Do not flatten the dough too much when cutting rounds; this helps the muffins keep their classic shape.
- For extra flair, add herbs or dried fruits into the dough during the mixing step.
