There’s nothing quite like a steaming bowl of chicken noodle soup to warm your soul on a chilly day. Growing up, my grandmother’s chicken noodle soup was the ultimate cure-all for everything from the common cold to a broken heart. Today, I’m excited to share my take on this classic American comfort food, featuring fusilli noodles for a fun twist!

Classic American Chicken Noodle Soup Recipe

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 carrots, sliced into rounds
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 cups low-sodium chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 ounces fusilli noodles
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat the oil: In a large pot over medium heat, warm the olive oil until it shimmers.
  2. Sauté the aromatics: Add the onion, carrots, and celery. Cook for 5-7 minutes until the vegetables start to soften. Add the garlic and cook for another 30 seconds until fragrant.
  3. Cook the chicken: Add the chicken pieces to the pot. Cook for 5-6 minutes, stirring occasionally, until the chicken is no longer pink on the outside.
  4. Add the broth and seasonings: Pour in the chicken broth. Add bay leaves, thyme, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  5. Cook the noodles: Add the fusilli noodles to the simmering soup. Cook for about 8-10 minutes or until the noodles are al dente.
  6. Finish and serve: Remove the bay leaves. Stir in the fresh parsley. Taste and adjust seasonings if needed.

Serving and Storing

To store, let the soup cool completely before transferring to airtight containers. It will keep in the refrigerator for up to 3 days or in the freezer for up to 3 months.
